Preparation
- Gently heat the soy milk and butter in a saucepan and stir in the yeast. Leave to rise for approx. 15 minutes.
- Mix the flour with the cocoa, erythritol, salt and vanilla.
- Stir in the egg and yeast milk.
- Knead everything into a dough.
- Chop the chocolate into chunks and knead into the dough.
- Cover and leave to rise in a warm place for approx. 60 minutes.
- Then shape the dough into a stollen, cover and leave to rise in a warm place for approx. 30 minutes.
- Place the stollen on a baking tray lined with baking paper and bake at 180°C for 50-60 minutes.
- Mix the powdered sugar with the cocoa powder and sieve over the cooled stollen.
