Preparation
- Mix the chia seeds and water and leave to soak for 10 minutes.
- Knead the oat flour with the buckwheat flour, coconut oil, spices, protein powder, almonds, flavorite powder, banana and the chia mixture into a dough and roll out into a thick sheet (note: the dough is a little crumbly. The best way to roll it out is between two sheets of cling film).
- Cut out small cookies from the dough using a Gingerbread Men tin and place on a baking tray lined with baking paper. Bake at 175°C for approx. 10 minutes.
- Prepare an icing from powdered sugar and milk and decorate the cookies with it using a piping bag.
